On the strength of our long experience in the production of Provence wines, we have developed our range by always favouring the permanent search for quality. We carefully select the best terroirs, the finest grapes and share best practices with our partner winegrowers to create authentic wines that reflect the DNA of Peyrassol. From this vintage, we make the choice of organic, in coherence with the range of our wines of the estate. A demanding and uncompromising sourcing brings us today to offer you the best of Provence.
The 2022 vintage
Marked by a particularly hot and dry climate, the 2022 vintage in Provence benefited on the terroirs of the interior valleys of some welcome showers in early September, which allowed the grapes to complete their maturity. The harvest then took place under particularly mild sky, which directly contributed to the quality of the harvest.
Soil
Clay-limestone, predominantly limestone.
Grape varieties
80% Syrah – 15% Cabernet – 5% Grenache.
Vinification
The grapes are sorted in the vineyard and a second time on a table. It is destemmed but not crushed: the grapes are placed in concrete vats under gravity. Vatting for 3 weeks, with alternating pump-overs.
Vinification
Organic farming. Selection of plots yields of around 35 hl/ha. Harvested by hand, variety by variety, in 25 kg crates.
Tasting notes
Light in colour with hints of violet, this cuvée reveals a nose with notes of strawberry and redcurrant, coming from a well-ripened
then gives way to sweet spices. The palate is beautifully mature tannins and acidity are soft and mellow. An accessible wine with a fine character.
Pairing
A homemade terrine with a platter of delicatessen meats, carpaccio of beef with sucrines and capers, sautéed veal with apricots, as well as courgette tagliatelle with thyme and walnuts or roasted sweet potato with lemongrass sauce, this cuvée leaves plenty of room for your culinary creativity.

4 to 8 years.
